From that meeting came a love, a life project, a shared dream: to open a restaurant that would be a home, a heart, a territory. In 1990 they opened Keisn, their first venue: small, authentic, with a name rooted in the Sappada dialect and territory. Here, Fabrizia began cooking, guided by the instinct passed down from her mother and grandmother. Here, Roberto built the wine cellar that would become legendary.<\/p>\n<p style=\"text-align: center;\">In 1997, Keisn earned a Michelin star. Ma\u00eetre and sommelier, she refined her training through AIS (Italian Sommelier Association). They can be discovered by scrolling through the wine list, but for the right pairing today there is Elena in the room, to whom Roberto bequeathed the keys to the cellar and an endless passion. A passion that Roberto also passed on to Ovid, who was his student for eight years. Arriving at Laite fresh out of high school, Ovid served an all-around apprenticeship with Roberto: the art of hospitality, room service, and finally approaching wine and the myriad nuances of proper pairing.
