“Anna’s house up in Hoffe is for sale, go for it,” suggested dad Silvio.

Fabrizia and Roberto didn’t hesitate. They knew that house well. They had always dreamed of a place of their own, where something resembling a dream could be born, and Keisn had become too small.

So in 2001, Laite was born. In the Sappada dialect, it means a meadow in the sun: a name that promises light, welcome, and future. The rooms that now welcome guests date back to the 1800s and the 1600s. Once simple spaces, shielded from the cold by small windows and large tiled stoves, today they are intimate and elegant, warmed by living wood and the care with which they were brought back to life.

Roberto stripped every centimeter of the original wood by hand, with the patience of someone who understands the value of time. Every wall, every object tells a story, preserved and gently revealed. In winter, the warmth of the kòchlouvn warms the soul before the body. In summer, the air is scented with stone pine, Fabrizia’s beloved essence, which sometimes also appears in her dishes.

Laite is not just a restaurant: it is a place of the soul. Here, every gesture is care. Every dish, a story. Every season, a new emotion to share.
